Roasted Mustard Chicken with Oven Roasted Potatoes
Every Christmas my stepsister gives everyone homemade preservatives. This year she gave mustard. Other than sandwiches, I had no idea what else to do with the mustard. Then I remembered back when I use to serve food at my first job, we sometimes had mustard chicken. A lot of recipes I looked up have stuff I don’t have. So I just marinated the chicken (skinless) in the mustard. While that marinates, I cut up some potatoes, sprinkled dry thyme, salt and pepper, drizzled some olive oil, toss and pop em in the oven for 30 minutes, remembering to turn them halfway through. After I take them out of the oven, I place the chicken in the same baking pan I used for the potatoes and bake em for about 45 minutes.
